Changing skin on mobs

So I notice you can change the skin color and manipulate many mobs texture color. Is there a way to maybe change other things about the color? Any other appearance change you can make with them?

The only thing you can really change is colors and depending on the model those may not even work. If it is a player race you can mess with facial features like you do at character creation.
